I was visiting my fiance recently. I wanted to prepare a light lunch. THE CHALLENGE: There wasn't a whole lot of food in his kitchen (not like mine anyways). At first glance.... green beans in a can, cheese and tortillas in the refrigerator. Oh and in the pantry... some dried spinach pasta that I bought us recently from Little Italy (yeah!). A few garlic cloves and sprigs of Italian parsley remained from the corn beef dinner I prepared last week. A couple of frozen chicken thighs in the freezer.... perhaps there is a meal masterpiece in disguise, sitting right before me.
My creative mind started churning with possibilities.
I ended up making a chicken, walnut, spinach pasta.... with Italian parsley, parmesan cheese, garlic, and olive oil. It turned out really well. If you'd like the recipe, click here:
